Award Winning welsh, farmhouse cheese handcrafted in the traditional way from sheeps milk.
We have developed a traditional, welsh, farmhouse cheese made from sheeps milk produced solely from our flock at Lodge Farm. This is so we can ensure the quality, purity and cleanliness of the milk used. The sheep themselves are feed purely on grass and crops grown and harvested on the farm. The cheese is handcrafted in a modern facility, conforming to modern health and hygiene standards, within our old stone barns. Although machinery is obviously used, our cheese is still made by hand "in the old fashioned way."
Once out of the antique press, the cheese is allowed to develop a natural rind, whilst maturing in the original cellar of our 18th Century farmhouse, giving it the perfect temperature and humidity conditions to ripen.
